Vineyard Notes

Crafted from the select block from Preston Vineyard in Rutherford, Napa, it offers an exceptional portfolio of wines, each highly limited and bearing the distinct signature of its origin. The varietals including Cabernet Franc and Merlot are big and juicy, an astounding reflection of Napa terroir.

Winemaking Note

Fermentation for 14 days: Whole Berries, Inoculation with FX10 after Cold soak for 2 days, Color enzyme, Saignee, Must Adjustment by Tartaric Acid addition (1.25g/L), Cooler fermentation (75F~80F), Natural Malolactic fermentation. Aging for 26 months in 100% French oak barrels.

Tasting Notes

The 2016 Cabernet Sauvignon is deep and elegant. Soft and silky tannins in the backbone, black cherry and purple flowers are laced with savory notes of dried herbs. There is thyme and marjoram intertwined with vanilla and roasted wild fowl to give the impression of a freshly roasted game bird with a herb/blueberry compote. The palate is soft and inviting, but with the structure to age hidden beneath the lush fruit. Wild blueberries shine through the palate, enhanced by herbs, black pepper and coco.
