Pressed out and cold fermentation for 21 days, the wine went aging in neutral barrel for 8 months with minimal intervention. Disgorged in June 2021, the wine got minimal dosage to keep the balance with acidity.

INNOVATUS Sparkling Rose Wine shows romantic pastel pink color which sets the tone of the wine. The freshness yet medium to full body reminds of the France Loire Sparkling Rose. The cold fermentation keep the brightness of the notes such as apple, fig and rose and hint of citrus, which are wrapped by a crisp, palate-cleansing acidity. Dry and alcohol is 13%. This elegant yet powerful sparkling rose can be aged for another 10 years.
