Winemaking Note

Fermentation for 14 days: Whole Berries, Inoculation with FX10 after Cold soak for 2 days, Color enzyme, Saignee, Must Adjustment by Tartaric Acid addition (1.25g/L), Cooler fermentation (75F~80F), Natural Malolactic fermentation. Aging for 22 months in 100% neutral French oak barrels.
